CHEESE SAUCE

~ The Pillsbury Cookbook

2 T. margarine or butter
2 T. flour
1/4 t. salt
1/8 t. pepper
2 c. milk
8 oz. (2 c.) shredded cheddar
1 t. Worcestershire sauce
dash hot pepper sauce

In medium saucepan over low heat, melt margarine. Stir in flour, salt and pepper. Cook 1 minute, stirring constantly, until smooth and bubbly. Gradually stir in milk. Cook over medium heat, stirring constantly, until bubbly and slightly thickened, about 7 minutes. Remove from heat. Add cheese, Worcestershire sauce and hot pepper sauce; stir until cheese is melted. Makes about 2-1/4 cups.

Notes: Use this as a way to add protein, through milk and cheese, to veggies. This sauce is what made me, as a kid, like cauliflower and Silas like broccoli.
