EGG SUBSTITUTE

1 1/2 T. water
1 1/2 T. oil
1 t. baking powder

Mix ingredients. Replaces one egg.

Notes: We don't have an egg-free diet, but there are always dietary restrictions (allergies and dislikes) for the families I bring food to through the meals ministry at church. This works well for baking and I use it in cornbread.
