APPLE BUTTERMILK BRAN MUFFINS

1 c. margarine
2 c. sugar
1/2 t. salt
4 eggs
5 t. baking soda
1 qt. buttermilk
5 c. flour
3 c. all-bran or bran buds
3 c. peeled, finely chopped apple

Cream together margarine, sugar, salt and eggs. Add baking soda to buttermilk in large bowl. Alternating in thirds, add flour, bran, and buttermilk to creamed mixture. When ready to bake, for every 3 cups of batter, add 1 cup finely chopped apple. Bake in a greased or lined muffin pan at 400 degrees for 15-20 minutes.

Makes 36 muffins.

Notes: Batter, without the apple added, can be stored in a tightly sealed non-metal container in the fridge for up to six weeks. If you only want to make a dozen at a time, then use three cups of batter and one cup of apple.

Can you substitute the bran with something else? I don't really know what the properties of bran are so I don't know what a good sub would be...oatmeal?

I'm not sure if you could sub something. Maybe you could google "bran substitutes" and find an answer. Or maybe someone else will pipe up with an answer here.
