ZUCCHINI DROP COOKIES

1 c. grated zucchini
1 c. sugar
1/2 c. margarine or oil
1 egg, beaten
2 c. flour
1 t. baking soda
1 t. cinnamon
1/2 t. cloves
1/2 t. salt
1 c. chopped nuts
1 c. raisins

Heat oven to 375 degrees. In large mixing bowl, combine zucchini, sugar, and margarine. Stir in egg. 

In a separate bowl, mix flour, baking soda, cinnamon, cloves, salt, nuts, and raisins. Add to zucchini mixture and stir until thoroughly combined. Drop by teaspoonfuls onto greased baking sheet. Bake for 12–15 minutes.

Makes about 3 dozen cookies.

Notes: I don't use nuts or raisins, but sometimes use extra cloves.
