ZUCCHINI DROP COOKIES

1 c. grated zucchini
1 c. sugar
1/2 c. margarine or oil
1 egg, beaten
2 c. flour
1 t. baking soda
1 t. cinnamon
1/2 t. cloves
1/2 t. salt
1 c. chopped nuts
1 c. raisins

Heat oven to 375 degrees. Combine zucchini, sugar and margarine. Add egg. In a separate bowl, combine dry ingredients, nuts and raisins. Add to zucchini mixture. Drop by teaspoonfuls onto greased baking sheet. Bake for 12 – 15 minutes. Makes about 3 1/2 dozen cookies.

Notes: I use neither nuts nor raisins, but sometimes use extra cloves.
