CHICKEN & APPLE CURRY

3 T. butter
2 small onions, chopped
2 apples, peeled, cored, and finely chopped
3 T. flour
1 T. curry
8 boneless, skinless chicken breasts
1 c. hot chicken broth
1 c. milk
salt & pepper to taste

Preheat oven to 350 degrees. Lay breasts in 9x13 pan. Salt and pepper to taste. Saute apple and onion in butter until tender. Add curry and sauté one minute more. Add flour and cook another minute. Add broth and milk. Stir well. Pour over chicken and bake 45-50 minutes or until chicken is done.

Notes: I used 3 frozen breasts and cut them in half. It filled the whole pan and was more than enough to eat. We also froze some of the leftovers.

this sounds good - what kind of apples did you use?

I usually have braeburns or reds in the house, so that's what it would have been. Let me know if you try it!
