1 1/2 c. flour
1/2 c. cornmeal
1 T. sugar
2 t. baking powder
1/2 t. salt
1 egg
1 1/4 c. milk
1/2 c. vegetable oil
1/3 c. marinara sauce
1/2 c. parmesan cheese
1/3 c. finely chopped pepperoni

Heat oven to 400 degrees. Mix all dry ingredients. In a separate bowl, mix egg, milk and oil. Make a well in the dry ingredients and add wet ingredients. Stir until combined. In a small bowl, combine marinara sauce and parmesan cheese; set aside. Line muffin cups (36 mini or 12 regular) with paper liners or spray with non-stick spray. Fill cups 3/4 full with batter. Spoon some sauce mixture on the top and press in slightly. Sprinkle with pepperoni. Bake for 15 minutes, allow to cool in pan for a few minutes, then serve warm.
