I love to eat. I also have a complete inability to wing it in the kitchen. These two facts have led me to collect lots of recipes from other people. CRUSTLESS QUICHE
~ Anne Payne/Cooking for the Kids
2 c. small curd cottage cheese
2 c. shredded Monterey Jack cheese
2 c. shredded cheddar cheese
4 eggs, lightly beaten
2 T. butter or margarine, melted
4 oz. can chopped green chiles
2 T. chopped black olives
1/2 c. flour
1 t. baking powder
1/2 t. salt
Preheat oven to 400 degrees and grease a 9-inch pie plate. In bowl, combine cottage cheese, Monterey jack cheese, cheddar cheese, eggs, butter, chiles and 2 tablespoons olives. In a separate bowl, combine flour, baking powder and salt, Add flour mixture to cheese mixture and mix well.
Transfer to greased pie plate. Bake 15 minutes. Reduce heat to 350 degrees and bake 30 minutes longer or until knife inserted near the center comes out clean.
Notes: The cheese mixture can be prepared ahead of time and refrigerated.
