I love to eat. I also have a complete inability to wing it in the kitchen. These two facts have led me to collect lots of recipes from other people. CRICKET'S COLESLAW
~ Pamela Reynoso
4 c. shredded cabbage
1 large shredded carrot
1/4 c. finely chopped bell pepper
2 T. finely chopped onion
1/2 c. mayo
2 T. vinegar
1/3 c. sugar
1 t. celery seed
1/4 t. salt (optional)
1/4 t. pepper (optional)
Mix all ingredients, except the cabbage, well. Add cabbage one cup at a time. Best if let to sit overnight.
Notes: I use about one tablespoon of dried, minced onion in place of fresh onion and let it sit about four hours. Sometimes I chop everything finely and sometimes I chop it coarsely, just depends on my mood and time constraints.
