3 medium ripe avocados, peeled
1/4 c. finely chopped onion
1/4 c. minced fresh cilantro
2 T. lime juice
1/8 t. salt
In a small bowl, mash avocado with a fork. Stir in the onion, cilantro, lime juice and salt. Refrigerate until serving.
Notes: I detest avocados. Always have, always will. However, I wanted to show my kids that I'm willing to eat things I don't like, just as I expect them to do. So I tried this recipe. While I'll never rush out to eat guac, this actually wasn't too bad.
