ALTON BROWN'S GRANOLA

3 c. rolled oats
1 c. slivered almonds
1 c. cashews
3/4 c. shredded sweet coconut
1/4 c. plus 2 T. dark brown sugar
1/4 c. plus 2 T. maple syrup
1/4 c. vegetable oil
3/4 t. salt
1 c. raisins

Preheat oven to 250 degrees. In a large bowl, combine the oats, nuts, coconut, and brown sugar.'

In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

Notes: Really sweet and totally yummy! This can be made in the crockpot, cooked on low for about three hours. Just make sure to leave the lid cracked and stir periodically. Honey can be used in place of maple syrup.

This looks fabulous! Is it so sweet that you'd cut the amount of sugar and/or syrup and still have a tasty granola?

Kelly - I think it depends on how you want to use it. We ate some of it dry as a snack and it was fine. Sweet, but not overly so. It was when we ate it with milk as cereal that it was too much. So, I'd probably cut the brown sugar (not the syrup/honey, as you need the liquid) next time I make it for cereal.

This is my favorite granola recipe! I change it up every time I make it. I didn't know you could do it in the crockpot...I'd like to try that but I always make a double batch. Do you think it would work for that?

We made it this morning and did not find it overly sweet at all. Also it did not take as long as stated. It only took about 55 minutes. I think our oven runs hot though. We really liked it although I thought it lacked a little flavor. Probably because there was no cinnamon or vanilla in it. But we really like it. Thanks for posting it Bethany!
