1 3/4 c. flour
1 T. baking powder
1/2 t. salt
2 T. sugar
2 eggs
1 1/2 c. milk
3 T. oil
Whisk flour, baking powder, salt, and sugar together. In a separate bowl, mix eggs, milk, and oil. Add wet ingredients to dry ingredients and stir until moistened, but still lumpy. Cook on lightly greased griddle or skillet over medium-high heat. Use 1/4 cup of batter per pancake.
Makes 10-12 pancakes.
Notes: We've also enjoyed using coconut and/or almond milk to make a dairy-free version of these and sometimes use whole wheat flour instead of all-purpose.
