1 c. canned pumpkin
1 c. sugar
1/2 c. vegetable oil
1 egg
2 c. flour
2 t. baking powder
2 t. ground cinnamon
1/2 t. salt
1 t. baking soda
1 t. milk
1 T. vanilla extract
2 c. semisweet chocolate chips
1/2 c. chopped walnuts (optional)
Preheat oven to 350 degrees. Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda in the milk and add to flour mixture. Add flour mixture to pumpkin mixture and mix well. Add vanilla, chocolate chips and nuts.

Drop by spoonful on greased cookie sheet and bake for 10 minutes or until lightly brown and firm. Makes 3 1/2 - 4 dozen cookies.

Notes: I only use 1 - 1 1/2 cups of chocolate chips and there are still plenty of chips in each cookie. Don't panic if you forget to dissolve the baking soda in the milk. The cookies turn out great, even if you just dump those ingredients in the bowl separately or skip the milk entirely.
