SILAS' CHICKEN
~ Silas Weathersby
14.5 oz. can diced tomatoes
4 oz. can diced green chiles
1/2 onion, chopped
2 lbs. chicken breasts
grated cheddar cheese
Preheat oven to 350 degrees. Place chicken in 9x13 pan. Pour tomatoes, chiles, and onions on top of each breast. Bake 50 minutes or til no longer pink. Remove from oven and sprinkle with cheese before serving.
Notes: This can also be made in the crockpot. I do it that way by placing the onions on the bottom of the crockpot, laying the chicken over the onions, then spreading the chiles and tomatoes over the chicken. I cook it on low for four hours, then shred, serve over rice or noodles, then sprinkle with grated cheese.

We make something called Jack Fish that is a lot like this recipe... but even though my boy's name is Jack... the fish was already named that. We'll have to mahe Silas Chicken, soon. Hmm... Maybe even tonight!
