I love to eat. I also have a complete inability to wing it in the kitchen. These two facts have led me to collect lots of recipes from other people. WESTERN OMELETTE CASSEROLE

1/2 - 2/3 loaf of French or Italian bread
2 T. finely diced onion
1/2 red pepper, chopped
1/2 green pepper, chopped
1-2 c. diced ham
1 c. shredded cheddar
10 eggs
2 c. milk
1 t. dry mustard
salt and pepper, to taste
Grease a 9×13 casserole dish. Tear the bread into pieces and place in the dish. Sprinkle the peppers, onions, ham, and cheese over the top of the bread. Beat the eggs with a whisk. Stir in the milk, dry mustard, salt and pepper. Pour over the ingredients in the pan. Cover and refrigerate overnight. Bake uncovered at 325 degrees for 1 hour.
Notes: I've made two loaves of simple bread and used one of them for this, which worked out well.
