DO-IT-ALL MARINADE


~ All You - 8/26/11

3/4 c. olive oil
1/2 c. soy sauce
1/4 c. Worcestershire sauce
1/4 c. balsamic vinegar
2 T. lemon juice
2 T. Dijon mustard
1 t. pepper
3 cloves garlic, finely chopped
1 T. finely chopped fresh parsley

Whisk all ingredients together. Pour marinade over chicken, steak or pork; cover and chill meat for at least 5 hours. Remove meat from marinade, discarding marinade. Pat meat dry and cook as desired.

Notes: We use this with three pounds of chicken breasts or salmon and it's delicious, tasting better the longer it marinates. We often put raw chicken in this marinade and pop it in the freezer when we get a Zaycon order, then shred the cooked chicken and serve it over rice or use it to make a hearty salad. We eat the salmon as is.

We tried this with the salmon last night. It was not our favorite but Dacia Grace did not overly complain about eating salmon so that is a plus. It was a tad too salty for me. Might try this with chicken or pork another time.
