OVEN ROASTED BROCCOLI

1 lb. broccoli, rinsed and trimmed
2 T. olive oil
2 cloves garlic, minced
1/2 t. kosher salt
grinding of fresh pepper
1/3 c. panko or homemade bread crumbs
1/4 c. finely grated parmesan cheese

Preheat oven to 425 degrees. Peel the tough outer layer of the broccoli stem. Cut the stalk into slices 1/4-inch thick and trim the florets into bite sized pieces. Toss the broccoli with the olive oil, garlic, salt, and pepper in a large mixing bowl.

Spread the bread crumbs on a 13" jelly roll pan, and toast for about one minute. Remove the bread crumbs from the oven, and toss with the broccoli mixture. Spread the whole mixture onto the jelly roll sheet, and roast just until the broccoli is tender, 8 to 10 minutes. Remove from the oven, and top with grated parmesan.
