WHITE CHOCOLATE, CHERRY, ALMOND COOKIES


~ Lisa's Dinnertime Dish

1 2/3 c. flour
3/4 t. baking powder
1/2 t. baking soda
1/2 t. salt
3/4 c. butter
3/4 c. packed brown sugar
1/3 c. sugar
1 t.vanilla
1 egg
12 oz. pkg. white chocolate chips
1 c. dried cherries
3/4 c. slivered almonds

Preheat oven to 375 degrees. Combine flour, baking powder, baking soda, and salt in a small dish; set aside. Beat butter, sugars and vanilla together until creamy. Add egg. Add the flour mixture a little at a time, mixing thoroughly. Stir in white chocolate chips, cherries, and almonds. Drop onto cookie sheet lined with parchment paper. Bake 8-12 minutes or until lightly browned. Cool on wire rack.

Makes about three dozen cookies.

Notes: I never have parchment paper, so I just lightly grease the cookie sheet or use silicone baking mats and it works fine.
