GARLIC ROASTED CAULIFLOWER
~ average betty
1 head cauliflower (4-5 c. florets)
3 T. olive oil
2 T. lemon juice
2 cloves garlic, finely minced
salt & pepper, to taste
parmesan cheese
Preheat oven to 425 degrees. Break or cut cauliflower into bite-sized florets, then place in a bowl and cover with olive oil, lemon juice, garlic, salt, and pepper. Toss to coat, then spread in single layer on baking sheet. Bake 12-15 minutes, remove from oven and turn florets, then cook another 10-12 minutes until golden brown. Sprinkle generously with parmesan before serving.
Notes: We make a double batch and it takes a total of 30 minutes in the oven.

Oh my, SO yummy! I would never have thought of these ingredients with parmesan at the end. We all loved it.
