MOSTACCIOLI WITH SAUSAGE & TOMATOES


~ Safeway mostaccioli package

16 oz. mostaccioli
1 lb. Italian sausage
2 cloves garlic, minced
10 oz. frozen chopped spinach, thawed and squeezed dry
28 oz. can diced tomatoes in juice
1 t. basil
1 t. oregano
parmesan cheese

Cook mostaccioli according to package directions. Meanwhile, in a large skillet, saute sausage and garlic, stirring and breaking up meat until cooked through. Stir in spinach, tomatoes with juice, basil, and oregano. Cook until heated through. Drain pasta and return to pot or pour in serving bowl. Cover with sauce and toss. Serve with parmesan cheese.

Notes: I'd never heard of mostaccioli before making this, but it's just a tubular noodle and we use whatever small, shaped noodle we have on hand. We usually use chopped fresh spinach instead of frozen, but have also subbed kale for the spinach. It's a dairy-free dish if you skip that cheese and tastes just as good.
