BIG SOFT GINGER COOKIES


~ allrecipes

2 1/4 c. flour
2 t. ginger
1 t. baking soda
3/4 t. cinnamon
1/2 t. cloves
1/4 t. salt
3/4 c. margarine, softened
1 c. plus 2 T. sugar, divided
1 egg
1 T. water
1/4 c. molasses

Preheat oven to 350 degrees. Mix flour through salt. Set aside. In large bowl, cream margarine and sugar until light and fluffy. Beat in egg, then stir in water and molasses. Gradually add dry ingredients. 

Shape into walnut-sized balls and roll in sugar. Bake 8-10 minutes, cool on sheet for 5 minutes, then transfer to cooling rack. 

Makes about three dozen.
