CHERRY CHIP COOKIES (plus some variations)

1 cherry chip cake mix
2 eggs
1/3 c. oil
1 T. vanilla
1 c. mini chocolate chips

Preheat oven to 350 degrees. Mix all ingredients, drop by teaspoonfuls onto cookie sheet, and bake for 8-10 minutes.

Makes about 3 dozen cookies.

Notes: Excellent with Hershey’s Cherry Cordial Kisses placed on top as soon as the cookies come out of the oven. Fun to experiment with different cake mixes and add-ins. May substitute other liquids for vanilla and regular chocolate chips for mini ones.

Chocolate Peanut Butter – Use a chocolate cake mix, water in place of the vanilla, and peanut butter chips in place of the chocolate chips.


Strawberry Funfetti - Use Pillsbury Funfetti cake mix, strawberry extract in place of the vanilla, and sprinkles in place of the chocolate chips (though we use about 1/4 cup instead of a whole cup).
