CHERRY CHIP COOKIES (plus some variations)

1 cherry chip cake mix
2 eggs
1/3 c. oil
1 T. vanilla
1 c. mini chocolate chips

Preheat oven to 350 degrees. Mix all ingredients, drop by teaspoonfuls onto cookie sheet, and bake for 8-10 minutes.

Makes about 2 1/2 dozen cookies.

Notes: Excellent with Hershey’s Cherry Cordial Kisses on top. Fun to experiment with different cake mixes and add-ins! May substitute other liquids for vanilla and regular chocolate chips for mini ones.

Spice – Use a spice cake mix and substitute chopped nuts (I ground mine down to nearly a powder as the family doesn’t like nuts in stuff) for the chocolate chips. Pretty tasty.

Chocolate Peanut Butter – Use a chocolate cake mix, water in place of the vanilla, and peanut butter chips in place of the chocolate chips. These are my least favorite of the variations I’ve tried.

Strawberry Funfetti - Use Pillsbury Funfetti cake mix, strawberry extract in place of the vanilla, and sprinkles in place of the chocolate chips (though we use about 1/4 cup instead of a whole cup).
