DUTCH BABIES


4 eggs
1 c. milk
1 c. flour
butter

Preheat oven to 425 degrees. Mix first three ingredients together. Place one tablespoon of butter in pie pan and stick in oven until melted. Pour just enough egg mix into hot pan, on top of melted butter, to cover the bottom of the pan and bake for 20 minutes. Repeat process until all the batter is gone.

Notes: If you use a 9x13 or 11x7 in place of a pie pan,  you can add all the batter at once. We usually bake it as directed and top it with lemon juice and powdered sugar, but you can add cinnamon to the batter or sprinkle it on top, then serve with maple syrup or jam. They're also really good made with coconut oil instead of butter. Some people call these German pancakes. Call them what you want … they’re so easy and yummy!

Wow! I've read about these before but never have tried them and I'm SO glad I did today! The flavor reminds me of a cross between a pamcake and a custard pie. I expected a "bread-y" texture but got more of a creamy texture...which is way better! The whole family loved them and we'll be having them again soon, I'm sure!

I make mine in a 9" cast iron skillet. :)
