EGG SALAD PITAS


~ Country Magazine August/September 2000

2/3 c. mayonnaise
2 T. sweet pickle relish
1 t. mustard
1/4 t. pepper
1/4 t. celery salt
1/4 t. paprika
1/4 t. dried basil
1/4 t. salt
6 hard-cooked eggs, coarsely chopped
1/2 c. grated cheddar cheese
1 small onion, finely chopped
1 large carrot, grated
2 bacon strips, cooked and crumbled
3 pita breads, halved
lettuce leaves and sliced tomato (optional)

In a bowl, combine the first eight ingredients. Stir in the eggs, cheese, onion, carrot and bacon. Spoon about 1/2 cup into each pita half. Add lettuce and tomato if desired.

Notes: I either use half an onion or use dried minced onion instead of fresh. I’ve never used the tomato or lettuce. As much as I love pitas, we usually do this on regular bread because we always have it on hand.

You can get pitas pretty cheap at costco and they also double as mini pizza crusts for quick meals. Maybe you don't go to Costco though? I wish my family liked egg salad....this sounds delish!

Abby - Well, we always have a ton of bread on hand, so convenience is another factor. I think you should make a batch of this and see what your family thinks. Maybe it will change their view of egg salad. If not, more for you! :)
