2 lb. frozen hash browns
2 cans cream of celery soup
2/3 c. milk
8 oz. cream cheese
1 medium onion, chopped
shredded cheddar
salt & pepper to taste

Preheat oven to 350 degrees. Mix all ingredients except the cheese. Bake for 90 minutes, adding cheese the last few minutes.

Notes: You can add ham, sausage, mushrooms, chicken or whatever else sounds good to this basic recipe. If you don't want your onions to be crunchy, then dice them really small, saute them a little first, or use dried, minced onions instead. I like to add some finely diced mushrooms (the mushroom haters don't even notice them) and some cubed ham that I fry up before adding.
