MEATLOAF

~ Lucille Schneider, my grandma

1 1/2 lb. ground turkey or beef
2 c. bread crumbs or cubes
1/2 c. chopped onion
1 t. salt
1 egg
1/2 c. ketchup

May also include: chopped or grated celery, bell pepper, carrots, or zucchini, tomato sauce in place of ketchup, oatmeal in place of bread, any seasonings you like.

Preheat oven to 375 degrees. Mix all ingredients well. Pat into 9x5 loaf pan or shape into loaf in 11x7 or 9x13 pan. Bake for 1 hour or until done. Let sit for 5 minutes before slicing.

Notes: This freezes well. Sometimes I bake it before freezing it. Other times I mix the ingredients and then freeze in a ziploc bag, pulling it out the day I want to bake it.

What a wonderful recipe! Dacia Grace enjoyed helping mix this up for dinner tonight. She really enjoyed eating it as well as her daddy! A total keeper in our house.

So when you publish your cookbook, let me know because I will buy one as well as endorse it! :)
