RICE ELENA


~ A Taste of Oregon Cookbook


3-4 c. cooked rice, brown or white
2 c. sour cream
2 4-oz cans chopped green chiles
1 lb. grated jack cheese
salt to taste
1/4 c. grated cheddar cheese

Preheat oven to 350 degrees. Butter a 2 qt casserole dish. Mix all ingredients together except cheddar cheese. Pour in dish and sprinkle with cheddar cheese. Bake 30 minutes.
