HAWAIIAN CHICKEN STRIPS

chicken, cut into strips
egg
coconut
flour
salt
pepper
garlic powder
butter
Preheat oven to 400 degrees. Whisk egg(s) in a bowl. Mix dry ingredients in another bowl. Dip chicken strips in egg, then in dry mixture. Place on cookie sheet or in baking pan. Drizzle with melted butter. Bake for 25 minutes or until chicken is cooked through.
Notes: Use as much chicken as you like, and then as much of the other ingredients as you need to coat all the strips. Sometimes I sub coconut oil for the butter, which adds to the coconut flavor and works well for people who are dairy-free. We like to serve them with pineapple dipping sauce.
