SIX LAYER CASSEROLE

4-5 potatoes, peeled and sliced
3 carrots, peeled and sliced (or 2 cups frozen mixed vegetables)
1/2 c. uncooked white or brown rice
1 large onion, thinly sliced
1 lb. ground beef or turkey
1 t. salt.
1/4 t. pepper
28 oz. can diced tomatoes

Preheat oven to 325 degrees. Grease 3 qt. casserole dish. Layer potato slices in bottom of pan. Layer carrot slices over potatoes. Sprinkle rice over the carrots, then layer the onion. Separate off small bits of raw beef and arrange over the onion. Sprinkle salt and pepper over meat. Press all ingredients down evenly. Pour tomatoes over top. Cover with foil and bake 2 1/2 – 3 hours.

Notes: This is a simple, but tasty dish. You can easily dress it up with more/different seasonings (seasoned salt, Creole, Chicago steak, or Italian seasoning, etc.). We've added frozen corn when we didn't have quite enough carrots in the house, subbed ground venison for beef or turkey, and used both peeled and unpeeled potatoes. We always make ours in a crockpot and it's done after 4-5 hours on low.

I'm trying this tonight! Can't wait to taste the results...it was so easy to assemble. I used ground turkey breast, and added sage, thyme, and extra black pepper because we like our food spicy.

Do you think you could make this in the crockpot? I have it on my menu this week but didn't realize the long cook time. That's hard for us with Ava's dance and being out of the house 4 nights a week.

I made this with a can of Italian style diced tomatoes and a can of diced tomatoes w/ green chilis and put cheddar cheese on top and it gave it a great lil spice. I think next time I will use all italian style diced tomatoes, they have a great flavor. I got the Winco brand Hytop diced tomatoes, Italian style
