SPICY PESTO CHICKEN
1/4 c. shredded mozzarella
1/4 c. pesto
1/4 c. Dijon mustard
4 boneless, skinless chicken breasts
1/4 c. shredded parmesan cheese
Preheat oven to 350 degrees. Mix mozzarella, pesto and mustard; set aside. Lay chicken in a 9x13-inch pan. Spread pesto mixture over chicken. Top with parmesan cheese. Bake 30 minutes or until chicken is cooked through.
