1 T. vinegar or lemon juice

Place vinegar or lemon juice in measuring cup, then add enough milk to make one full cup of liquid. Let sit for five minutes before using.

Notes: This substitution is hit and miss, working well in some recipes and while making other recipes not as good as when actual buttermilk is used. Experiment and see what recipes you like it in, as it's a much less expensive option than buttermilk
