6 T. olive oil
6 T. soy sauce
6 T. honey
3 T. vinegar
1 1/2 t. thyme
1 1/2 t. paprika
1/2 t. cayenne
1/2 t. allspice
1 T. pepper
chicken
Whisk together all ingredients except chicken. Place chicken in a baking dish and cover with foil or in a lidded slow cooker. Temperature and time will vary according to type of chicken and quantity used, but an estimate is three pounds of boneless, skinless chicken breasts in the oven at 375 degrees for 45 minutes or in the slow cooker on low for four hours.
Notes: Moist, tasty, and delicious served with excess sauce over a pile of rice! I usually shred it and sometimes add it to salads, wraps, or quesadillas. It's spicy made as directed, so just cut back on the cayenne and/or pepper if you need to.
