CHICKEN & GREEN BEAN STIR FRY

1 lb. green beans, trimmed and cut into bite size pieces
4-6 T. sesame oil, divided
4 boneless, skinless chicken breasts, cut into bite size pieces
salt & pepper, to taste
2 T. minced ginger
2 T. minced garlic
1/2 c. + 2 T. soy sauce
2 T. apple cider vinegar
sesame seeds
cooked rice

Steam green beans until crisp-tender and bright green; set aside. 

Meanwhile, heat half the sesame oil in a skillet over medium heat. Add chicken, sprinkle with salt and pepper, and cook until no longer pink. Remove from skillet and set aside. 

Add remaining sesame oil to skillet. Once hot, add steamed green beans, ginger, and garlic. Stir fry for 1-2 minutes. Add chicken back to skillet, along with soy sauce and vinegar. Cook 2-3 minutes or until sauce starts to thicken. 

Sprinkle with sesame seeds and serve over rice.
