1 lb. green beans
4-6 T. sesame oil
2 T. minced ginger
2 T. minced garlic
1/2 c. + 2 T. soy sauce
2 T. apple cider vinegar
4 boneless, skinless chicken breasts, cut into bite size pieces
sesame seeds
Steam green beans until crisp-tender and bright green, then set aside.
Meanwhile, heat half of the sesame oil in a skillet over medium heat. Add chicken, then sprinkle with salt and pepper; cook until no longer pink. Remove chicken from pan and set aside.
Add remaining oil to pan. Once the oil is hot, add green beans, garlic, and ginger; stir fry for 1-2 minutes. Put chicken back in skillet, then add soy sauce and vinegar; cook until sauce begins to thicken, about 2-3 minutes. Sprinkle with sesame seeds and serve over rice.
