BREAKFAST SANDWICHES


6 English muffins
6 eggs
1/4 c. chopped green onion
1 c. shredded cheddar
2 1/2 T. vegetable oil
6 oz. ground breakfast sausage

Split the muffins open and toast them.

In a large bowl, mix eggs, green onion, and cheddar. Heat oil in a skillet, then pour egg mixture in and cook in one layer as you would an omelet. When egg mixture is cooked on the underside, flip over and cook other side. Remove from heat when cooked through.

While eggs are frying, form the sausage into small patties. Place the sausage in another skillet. Fry until browned, then remove and drain on paper towels.

Layer a sausage patty and 1/6 of fried egg mixture between each pair of muffin halves.
