SESAME CHICKEN

sesame seeds
1 c. water
1 c. sugar
1/4 c. vinegar
1/4 c. soy sauce
2 T. cornstarch, plus extra for coating
flour
1 lb. chicken, chopped
oil
Toast sesame seeds in skillet and set aside.
Mix water, sugar, vinegar, soy sauce, and two tablespoons of cornstarch; set aside.
Using a one to one ratio, combine extra cornstarch and flour. Coat chicken chicken in flour mixture. Pour a small amount of oil in skillet and fry coated chicken. Add soy sauce mixture and stir until thickened. Stir in sesame seeds.
Notes: If we use two pounds of chicken then we use about 1/2 cup of sesame seeds and 1/2 cup each of flour and cornstarch for coating the chicken. It's good served over couscous or rice.
