I love to eat. I also have a complete inability to wing it in the kitchen. These two facts have led me to collect lots of recipes from other people. CHEESY MUFFINS

1 1/2 c. flour
1/2 c cornmeal
1 T. baking powder
1/2 t. salt
pinch of cayenne
1/4 c. butter
1 c. milk
1 egg
1 c. shredded cheddar or pepperjack cheese
Preheat oven to 425 degrees. Grease 12 muffin cups.
Combine the dry ingredients in a large bowl. Set aside. Melt the butter and cool it slightly. Stir in the milk, then beat in the egg. Stir the liquid into the dry ingredients just until moistened. Mix in cheese. Divide the batter into the muffin pans. Bake for 15-20 minutes or until toothpick inserted in center comes out clean.
Notes: I mix my dry ingredients, then add the remaining ingredients one at a time. I cut cold butter in, rather than stirring in melted butter. Tiffany's recipe calls for cheddar, which tastes fine, but I also use pepperjack or pepper-cheddar (cheddar with some red pepper flakes tossed in) and it's delicious! Our family is split on which cheese is best, so try them all.
