HONEY & SPICE COOKIES


~ Inside the Kaganoff Kitchen

2 1/4 c. flour
2 t. baking soda
1/2 t. mace or nutmeg
3/4 c. unsalted butter
1 c. sugar
1 unbeaten egg
1/4 c. honey
extra sugar for rolling

Preheat oven to 350 degrees.

Mix flour, baking soda, and mace or nutmeg; set aside. Melt butter in a 2-quart saucepan. Cool, then add sugar; beat well. Add egg to butter mixture and mix well. Stir in honey and dry ingredients, mixing until just blended.

Put extra sugar in a low bowl. Drop the cookie dough by rounded teaspoonfuls into the sugar, rolling to coat. Place the coated balls on an ungreased cookie sheet. 

Bake 8-10 minutes, until a light golden color. If they turn brown, they are over-cooked and will be too hard when they cool. Allow the cookies to cool on the sheet for 1-2 minutes before removing to cooling rack.

Makes about three dozen.

Notes: These are great!  Super soft with a mild nutmeg flavor.
