ROASTED RED PEPPER & FETA DIP

1 whole roasted red pepper, from a jar
1 c. crumbled feta
1 small clove garlic
2 T. olive oil

Combine all ingredients in food processor and pulse for ten seconds.  Scrape down sides and repeat process until completely mixed.  Serve with fresh veggies or crackers.

Makes 3/4 cup. 

Notes: This freezes well.
