WHEAT GERM WHOLE WHEAT BUTTERMILK PANCAKES


2 eggs, lightly beaten
1/4 c. canola oil
2 c. buttermilk or substitute
2 t. baking soda
1/2 c. wheat germ
1 1/2 c. whole wheat flour
1/2 t. salt

Mix together eggs, oil, and buttermilk. Stir in baking soda, wheat germ, flour and salt. Cook on lightly oiled griddle on medium-high. Use about 1/4 cup batter per pancake.  

Makes about 14 pancakes.

Notes: Don't let the whole wheat flour and wheat germ scare you. These are thick and fluffy!
