SUGAR COOKIES

1 1/2 c. powdered sugar
1 c. butter, softened
1 egg
1 t. vanilla
1/2 t. almond extract
3 c. flour
1 t. baking soda
1 t. cream of tartar

Mix powdered sugar, butter, egg, vanilla, and extract. Mix in flour, baking soda, and cream of tartar. Cover and chill at least one hour.

Preheat oven to 375 degrees. Divide dough in half and roll one half at a time 1/4 inch think on a lightly floured surface. Cut into shapes. Bake on lightly greased cookie sheet until edges are light brown, about 7-8 minutes.

Makes about 2 1/2 dozen 3-inch cookies (see notes).

Notes: If you want to play around with flavors, just substitute other extracts (strawberry, orange, lemon, etc) for the vanilla and almond extract. Our favorite is to use almond extract for all the flavoring. No matter what you use, it will be a very subtle flavor. I make heart-shaped cookies that are 3 1/2 inches at the widest spot and get about 20 cookies per batch.
