JENNY'S PIZZA CRUST

~ Jenny Smith

2 1/2 c. flour, divided
2 t. rapid rise yeast
2 T. sugar
1 t. salt
1 c. warm water
3 T. olive oil
oil for spreading

Combine 1 1/2 c. flour, yeast, sugar and salt; set aside. Mix water and oil; add to dry ingredients. Add remaining cup of flour. Stir until soft dough forms. Cover with a clean cloth and let rise in a warm place for 20-30 minutes.

Preheat oven to 425 degrees. Spread pizza stone with olive oil, then spread dough over stone. Add sauce and toppings. Bake 15-18 minutes.

Notes: This crust works even if you use active yeast (just give it a little longer to rise) and/or add all the flour at once.

Photo notes: The pizza pictured above is mandarin chicken pizza

I'm annoyed. I just followed the instructions for this recipe, then after about 20 minutes of letting it rise, and wondering why it looked more like bisquick mix than pizza dough re-read the recipe and realized that the ingredients and the instructions don't match. So, what is it- 2 1/2 cups of flour or 1 1/2? I'm assuming the ingredients are right and the instructions are wrong.

Beep - Sorry!! I wrote it down wrong initially and evidently forgot to correct it when I transferred it to the computer. It's fixed now, but I'm sorry you ended up with lousy crust.
