CHEESY GREEN BEANS

6 c. cooked green beans
1 c. cottage cheese
1/2 t. garlic salt
1 t. basil
1/4 c. marinara sauce
3 c. grated mozzarella
4 t. parmesan cheese

Preheat oven to 350 degrees. Spread green beans in the bottom of a baking dish. In a small bowl, mix cottage cheese, garlic salt, and basil, then spread over beans. Spread marinara over cottage cheese mixture, then sprinkle mozzarella over everything. Bake twenty minutes, then broil until mozzarella is browned. Sprinkle with parmesan before serving.

Makes four servings.

Notes: I use fresh beans that I've steamed or frozen beans that I've thawed (not the Costco ones, as they are too firm/chewy if you don't cook them first). As much as I love eating the slab of cheese that's on the top of these beans, I prefer for everything to be mixed together. So I stir all ingredients, other than the parmesan, dump it all in the pan for baking, then sprinkle the parmesan on top when it's done cooking. It's delicious as is, but we sometimes serve it over quinoa or rice.
