KALE & BROCCOLI QUINOA
~ Carla's Confections
1 c. quinoa
2 c. water
1/4 c. olive oil
1 c. chopped onion
4 cloves garlic, chopped
2/3 c. chicken or vegetable broth
2 heads broccoli, cut into florets
2 bunches of kale, leaves removed from stems and torn in to bite-sized pieces
salt and pepper, to taste
parmesan cheese, to taste
lemon juice, to taste
Combine quinoa and water in a medium pan and bring to a boil. Reduce heat and cover, simmering 15 minutes or until tender and all the water has been absorbed.
In large skillet, heat olive oil over medium high heat. Add onions and cook until translucent, then add the garlic, stirring for about one minute. Add broth, broccoli, and kale. Reduce heat and cover. Cook for 5-10 minutes, stirring occasionally, until the broccoli is tender and the kale has wilted.
Combine quinoa and veggies. Garnish with salt, pepper, parmesan, and lemon juice before serving or let each person garnish their own.
Makes four servings.
Notes: I've made this with both raw and roasted broccoli. If I use roasted, then I cut back on the oil in this recipe and just mix the broccoli in when I combine the quinoa and kale.
