BLUEBERRY SOUR CREAM PANCAKES

2 c. flour
1/4 c. sugar
4 t. baking powder
1/2 t. salt
2 eggs
1 1/2 c. milk
1 c. sour cream
1/3 c. butter, melted
1 c. fresh or frozen blueberries

Combine dry ingredients in a bowl. In a separate bowl, beat the eggs. Add milk, sour cream and butter; mix well. Stir into dry ingredients just until blended. Fold in the blueberries. Use 1/4 cup of batter for each pancake and pour onto a greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. Makes about 20 pancakes.

Notes: Kelly's site, linked at the top of this post, also includes a recipe for blueberry syrup to pour over the pancakes, but we just eat them plain or with honey. These freeze well and can be toasted for breakfast.

I'm glad you liked them, Bethany.

We rarely put the blueberry syrup on the blueberry pancakes, but sometimes make the syrup for plain ones.

I just saw this and was like I need to try these, and what do you know I did according to my comment 2 1/2 years ago!!!
